Summer is here and we’re kicking things off with some amazing summer recipes to celebrate the warm weather and longer days. And, let’s face it, we can definitely use some fresh summer dinner ideas!

Watermelon Salad-0:37

  • 500 grams (3 cups) diced watermelon
  • 200 grams (1.5 cups) diced cucumber
  • 2 tablespoons chopped mint
  • 3 tablespoons olive oil
  • The juice of one lime
  • Salt and pepper to taste
  1. Into a bowl, add watermelon, cucumber, and mint.
  2. Whisk together olive oil, lime juice, salt, and pepper.
  3. Drizzle dressing over top of the watermelon, cucumber, and mint. Toss to coat

Oven-Fried Potatoes-1:01

  • 3 quarts water
  • 3 tablespoons salt
  • ¾ teaspoon baking soda
  • Several russet potatoes
  • Olive oil
  • Salt and pepper to taste
  1. Bring to water, salt, and baking soda to a boil
  2. Peel and chop potatoes into sizable chunks. Each potato should make about 8 to 10 wedges
  3. Boil potatoes for about 10 minutes, or until a fork can pierce them with just a bit of resistance.
  4. Drain potatoes and let them sit for about ten minutes, or until they’re only lightly steaming
  5. Put potatoes into a bowl with olive oil, salt, and pepper. Stir it all together so that the outsides are just a little bit rough
  6. Oil a baking sheet and place each potato wedge onto it
  7. Place potatoes in a 450-degree oven for 20 minutes.
  8. Remove pan and flip each potato to an unbrowned side
  9. Place potatoes back into the oven for another 20 minutes
  10. Remove pan and flip each potato to another unbrowned side
  11. Place potatoes back into the oven for another 20 minutes
  12. Salt and pepper to taste

Grilled Corn-2:09

  • Ears of corn, shucked or unshucked
  1. If your corn still has its husk, remove it
  2. Place corn on a grill or grill pan for about 5 minutes on each side
  3. Serve with butter and salt

Classic Burgers-2:23

  • 1 lb 80-20 beef, portioned into quarter-pound patties
  • Cheese of your choosing (I prefer Colby jack)
  • Salt
  • Pepper
  • Pineapple rings
  • Bacon
  • Hamburger buns
  1. Salt and pepper both sides of the patties
  2. Cook patty for four minutes on one side.
  3. Flip patty and add cheese. Cook for another four minutes.
  4. Remove patty from the grill and place it on a hamburger bun.
  5. Top with whatever toppings you like (e.g. lettuce, tomato, onion, ketchup, pineapple rings, bbq sauce, etc)

Pineapple BBQ Sauce- 2:56

  • 10 oz Pineapple jelly
  • 4 tablespoons of tomato paste
  • 2 oz bourbon
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1 tbs ground ginger
  1. To a pan over low heat, add pineapple jelly, tomato paste, bourbon, Worcestershire sauce, and soy sauce. Stir to make sure everything is evenly distributed.
  2. Once the jelly begins to liquefy, turn the heat up to medium and bring the whole thing to a simmer.
  3. Stir in the ginger.
  4. Set the sauce aside for later.

Smores Dip-3:38

Ingredients:

  • 5 semi-sweet chocolate bars
  • 3 cups of mini marshmallows
  • serve with graham crackers
